It is well known that fresh vegetables served at the peak of the season are the healthiest. Sometimes you have to hurry because the season is short: as is the case with asparagus, which is currently available at bazaars, neighborhood stores and supermarket stands. We will buy fresh asparagus for 3-4 weeks.

Official recommendations suggest the introduction of asparagus at 8 months of age. It is worth doing because these perennials are a real vitamin and mineral bomb: they are a valuable source vitamins A, K, C, folic acid, magnesium, phosphorus, potassium salts, sodium, calcium, asparagine, also have anti-cancer activity due to the content of such substances as sulforaphane, isothiocyanates, indoles, inulins - a prebiotic that promotes the development of beneficial bacteria in the intestines. In addition, they are easily digestible and usually well tolerated ... .

What asparagus for a child?

The best for a child will certainly be green asparagus, which do not need to be peeled, and which are the most delicate. They are more white-faced and require peeling: however, they are also valuable and good to give if we have the opportunity.

How to prepare asparagus?

  1. We cut off the lower phlegmon of the shoot.
  2. Then remove the skin with a sharp knife below the head (white asparagus must be peeled, greens not - just cut off the tips).
  3. We wash under running water.
  4. We dry it.
  5. We cook whole: in a wide pot or standing tall (the heads should be above the water level). First, bring the water to a boil, then put the shoots. We can add some butter to boiling water.
  6. We cook best, covered, on a fairly high heat (green boil about 3-4 minutes, white - about 10 minutes).
  7. It is best to steam.
  8. Drain well before serving.
  9. Asparagus are ready if they are soft after driving the fork.
  10. Be careful not to overcook!

How to check if the asparagus is fresh?

To check the freshness of asparagus, you can, of course, break the tip (they break easily, with a pop, after breaking from the inside spurting juice), which, however, most likely the seller will not like. The other way is to evaluate the heads - they should be bright and shiny. You can also rub the shoots for yourself. If they make a high-pitched, thin sound, it indicates their freshness.

White asparagus should be medium thick. You have to peel them off, so it's good that something remains after this procedure. If we buy green asparagus, we can also choose thin.

Asparagus cream - a recipe for babies

It is worth preparing asparagus cream for the youngest children.

We remove the woody ends, thoroughly wash the shoots and cook in a small amount of water. We cook the stalks first. When they are soft, we throw in the heads. The soup is wiped or mixed, we can season with dill, add half yolks, and for children not burdened with allergies, mix the whole with natural yogurt.
